I had some leftover
salmon, which I had baked the night before (coated with
olive oil, garlic powder, salt, pepper, and a bit of
rosemary.)
I mashed my leftovers up in
a bowl. To that, I added onion, salt, pepper, dill, and
mayonnaise. Then I stirred it up and stuck it in the
fridge. (Hey, if you've never made your own mayonnaise,
it's really worth it. I'll try to come up with an
awesome recipe next time.)
Once it was chilled, I put
a scoop on top of a bed of spring greens, added some
sprinkles of feta cheese, and some black olives. YUMMY!
Oven Broiled Vegies
I wanted to do something a
bit different last week. A dear friend was spending the
night, so I knew I could experiment, and if it failed,
she would be forgiving.
I took some red and yellow
peppers, sliced them thinly and added some frozen
zucchini. I coated them with olive oil, salt, pepper,
garlic powder, and a bit of dill and rosemary. Then I
baked them (at approximately 350.) Once they were soft,
they were a bit watery, so I blotted the water up with a
paper towel, added a touch of butter to them, and put
them back in the oven under the broiler until the edges
were browned.
Wow. They were really good.
I served those with the baked salmon and some basmati
rice.
