Speaking Engagement
I am scheduled
to speak at a CCW (Capital Christian Writers) meeting in March. The title of
my talk is, The Proper Cozy (We Don't Like to See the Violence, Dear).
As you can tell from the title, I'm going to have fun with that. When I
finish writing my handouts, I'll be sure to post them to my website so anyone
can download them. |

Cooking with Candice
On occasion, I like to
experiment with healthy new recipes. Here's an
interesting one I found in
Prevention Magazine. The cool thing about it is that
it contains no flour or oil. (For people with wheat
allergies, this is good.) It is loaded with sugar,
though, and I'm thinking about trying to use half
Splenda/half sugar to see what happens. If you try this,
let me know--and send pictures. I will post them. Brad
and I had a disagreement as to whether or not this
recipe was good. Brad says the cookies are too
chocolate-y.

Is there such a thing? And, anyway, that's the whole
point. All you have to do is eat one or two and your
craving is taken care of. |

Chocolate Bliss Bites
1/2 c.
unsweetened cocoa powder; pinch of salt; 1/2 c. sugar,
divided; 3 large egg whites; 1/8 tsp. cream of tartar; 1
tsp. vanilla extract; 1 tbls. confectioners' sugar.
Preheat oven
to 300 F. Line 2 baking sheets with foil.
In small bowl,
sift together cocoa salt, and 1/4 cup of the sugar.
In large bowl,
with electric mixer at medium-low speed, beat egg whites
and cream of tartar until soft peaks form. Beat in
remaining 1/4 cup sugar, 1/2 tablespoon at a time, until
meringue is glossy and stiff peaks form. Fold in cocoa
mixture and vanilla extract.
Drop by
rounded tsp. onto prepared baking sheets. Bake 25
minutes for soft chewy cookies or 40 minutes for crisp
ones. Dust cooled cookies with confectioners' sugar.
Makes 24.
Approximately 25 calories per cookie. |

What About the
Weather?
It's February
and it's cold. I say that it's about time after months
of weird warm weather! The only thing is that my feet
are cold and that makes me a little bit cranky. Oh,
well. If you've read my blog with any regularity, you'll
remember that we live in an old house. Despite
insulation and the recent addition of vinyl siding, it's
chilly. I think that's because of the windows. They're
old. The kind with storm windows. I can feel the cold
air coming through them. But, being that I'm sometimes
CandyPollyanna, I like to find something good in
everything. Here's the good about my windows in the
freezing weather:



The first time
I saw this, I was amazed. The ice is absolutely
beautiful. I love the fern-like pattern and wonder why
it turns out that way. I can't see out the windows when
it's this cold outside, but it's sort of nice to sit
here and be cozy (except for my cold feet).

Finally, some
words about The Boss, Mr. Winston. And let me remind you
that the world revolves around him, just in case you
didn't understand that yet. He Is The Boss.
He loves to
learn new words and phrases, and I have fun teaching
him. Those of you who know me well will not be surprised
by the latest phrase we're working on. I love Sesame
Street. (Honestly, I just love kid programs.) So, I'm
teaching Winston to imitate The Count. Ha, ha, ha,
ha. One! One bird! Ha, ha, ha, ha. He's doing
well.
